Dark meat, light in flavour
Saithe is caught in the same areas as cod, i.e. the North Sea around Denmark and in the northern atlantic ocean near Faroe Islands and Iceland.
Season: mainly from January to May, but there are regular catchings throughout the year. Available as frozen whole fish or fillets, skin-on or skinless. Packed IQF, layer or in industrial blocks.
H&G: Vertical frozen, in random weight, blocks in sacks or cartons.
Grading: Under 1,2 kg, 1,2 - 2,3 kg, 2,3 kg+
