Scallops are similar to crab or lobster taste-wise but they have a firmer texture with a sweet, buttery flavour. Canadian scallops live in the cold, pristine North Atlantic ocean surrounding the Island of Newfoundland, Canada. It is wild caught and manually processed in its own shell before individually quick frozen to make a rich flavourful sashimi grade shellfish. It is produced as half shell roe-on/off or half shell with meat, roe and viscera.
